2020 Until Venus
Forté of Petit Verdot
This is my first ever port-style wine. It is made from Petit Verdot, which is the perfect grape for this style of winemaking. We pick these grapes much later in the season versus the fruit that we use in the Fathom, so they come in ultra ripe. We ferment the wine down to about 6% residual sugar, then fortify with brandy, which raises the alcohol to 20%, thereby stabilizing and rendering a product that is extremely rich and timeless. In a classic sense, this is what vintage Port is all about.
This is not breakfast wine; or even dinner wine. Hair of the dog? Hmmm; I would proceed with caution, otherwise you may need a hair of the dog for your hair with the dog. I like port around midnight with a cigar, some really strong cheese, & good friends. Stilton, Roquefort, Gorgonzola and Fourme d’Ambert are the classic candidates, but a well-aged, powerful cheddar can also do the trick. Maybe throw in some nuts and dried fruits.
It doesn’t have to be midnight, but I recommend waiting at least until you can see Venus in the evening sky. This is the kind of wine that you contemplate the universe with.
